And it's partly from anorexia -- I would drink a lot of water, to help hide my hunger. If I had to break it down, I'd say that anxiety was probably what started it, way back when I was a kid (and drank whole milk by the carton) -- needing to have SOMETHING to do with my hands and/or mouth. I don't know now how I could have gotten through school as a kid -- nowadays, I need two bottles of water to get through my one classroom class, which lasts 2.5 hours. That's nearly half an ounce of water per minute, if you want to break it down that way...
But in Matt's case, I'd say worrying about it is what's making him thirsty... Less *being* more thirsty, and more being more *aware* of being thirsty... Just a guess, though...
