C interferes with amphetamine absorption. I recently began taking my 1g vitamin C in 'Ester' form at bedtime because I heard it's easier on the stomach. But then I read a description of 'Ester' C as being a sustained-release form; I am thus concerned that it might interefere with my dex dose the next day. Is this true? Is Ester C sustained release? If so, would it be active long enough in my system to interfere with my dex absorption the next day?

Simply put, no. Esters require stomach acid to degrade, slowing the dissolving of the ascorbic acid. That means that the ascorbic acid is not likely to be as concentrated in any one place in the stomach, so it is less likely to be a contact irritant to the stomach lining. It will be long gone before you take the dexedrine.
