Weight gain and increased appetite caused by Seroqul is pretty well known by many of you. But my question deals more with metabolism. I recently went from a high dose, 400mg, to a much smaller dose of 100mg. Does anyone have experience or know when a persons metabolism begins to return to normal?

Dunno. It's gonna be different with everyone. Could be days, weeks, months, years, or it may never happen at all. Genetic coding is altered with our meds and there is no guarantee things are going to return to where they used to be....the passage of time and disease added on top of that.
My sleep patterns after stopping zyprexa took about a month or two to stabilize. Weight gain came off pretty fast but I didn't gain much either. Metabolic stuff, well, that's pretty complicated....intricate workings of adrenals, thyroid, immune system, neurotransmitters, enzymes, etc....my body is different post-zyprexa than it was pre-zyprexa.
