Can I just stop the Paxil CR one day and start the Lexapro the next? And, if I am stopping one and starting another, do I need to worry about Paxil withdrawals?

Since both drugs have about a 24 hours halflife, you can switch straight across. You never know what to expect in a transition so you'll just have to feel it out. I wish for it go smoothly for you.
